Interesting discussion.
I set my string height from the deck ( finger board wood) at the 12th fret - 3/32" on the low strings, 1/8" on the high strings. Need it on the high side with heavier strings (11's) in order to get under them to bend.
I do this on vintage frets, medium jumbos and flatter Gibson type frets. String height remains constant on all guitars. But as mentioned, on beefier frets, I use a lighter touch when fretting chords or single notes. If you mash down too hard on taller frets, the notes will go sharp. I like that because it does reduce hand/finger stress and it also encourages you to relax a bit....
