Well, I find that information on Bacchus guitars is a little sparce at best. Try this site for starters: http://www.japanvintageguitars.com/Bacchus.html
It will give you some of the very basics for identifying different models. Although it has yet to be updated to include the Classic Series models.
A simple guide that I use when "sorting out" the lower end models is to avoid any models which include a hundred series number. For example, 500, 600 and 700 ect...and of course the price tag
I'm not saying that they're bad guitars, but I personally don't think they're as good as the Vintage or Classic or Duke series.
I've been looking to these for a year or so now and still find it difficult to attain good information. I'm guessing it's because, for some reason unknown to me, they're just not as popular as the more established MIJ brands such as Greco or Burny. Remember Google is your friend
And now for the disclaimer!!!
I am by no means an expert and have never owned a Vintage or Duke series Bacchus but listen to the guys that have them! I know I dearly love my Classic LP and have no intentions of parting with it any time soon.
EDIT:
Couple more sites for you that may answer your construction questions. Check the descriptions, they will usually give you some detail about the body construction, pups, electronics and hardware used.

There is another forum around somewhere that may have a lengthy thread dedicated to Bacchus/Momose/Deviser guitars.
